I walked into a contemporary minimalist restaurant wedged between Park Ave and Broadway on 21st. I sat down with a chef, unbinosticed to my novice mind; I was speaking with the CDC of Cosme. Chef Garnica is giving me a shot to work in a cuisine that I hold close to my heart. Gustavo Garnica is respected by all in the kitchen and is adored by the tortilla tias’. This conversation was eye opening hearing Chef Garnica talk about his travels from Mexico to Denmark to stage at Noma early on in his career. He would be considered in my eyes a gentle soul but don’t get me wrong, when the tickets are ringing his demeanor demands a lot from people around him. His peers demand a lot out of him. Chef Dani is a whisper in our voice because we strive to honor the work she has done before. Food is a part of me just as much music is.
