How much content should you be posting on social media? My opinion: as much as you can while still creating relevant content for your audience.
In 2019, the more content the better. If you can post 2-3 times a day while still delivering interesting content to your audience, the more engagement and exposure you'll get. That's just the way the algorithms are working these days.
In the end, if you're not capable of pushing high volumes of content, just remember that 1 > 0 and you always have to start somewhere.
