Grain-Free Granola Recipe
Adapted from MinimalistBaker.com.
Ingredients:
- 1-2 cups unsweetened coconut flakes
- 2 cups slivered raw almonds (or cashews)
- 1 ½ cups raw pecans
- 1 cup raw walnuts
- 3 Tbsp chia seeds
- ½ cup flaxseed meal
- ½ cup hempseed hearts
- 1 cup unsalted sunflower seeds
- 2 Tbsp ground cinnamon
- 4 Tbsp coconut sugar
- 1 tsp sea salt
- ½ cup coconut oil
- 2 Tbsp vanilla extract
- ⅓ cup maple syrup (or honey)
- ½ cup dried fruit (blueberries, raisins, or cranberries)
Instructions:
- Preheat oven to 325°F (162°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the dry ingredients.
- Melt coconut oil and maple syrup together, then pour over dry ingredients. Mix well.
- Spread the mixture onto the baking sheet and bake for 15 minutes.
- Stir, then bake for another 15-20 minutes until golden.
- Remove from oven, stir in dried fruit, and let cool.
