  1. You mentioned the first way - Quit.
  2. Option-click on the desktop will hide InDesign and you leave the program but not quit it.
  3. Force Quit - Option+Command+esc
  4. Command+H - will hide InDesign. Which surprised me the first time it happened because Command+H used to Hide Frame Edges.
  5. Menu Bar> InDesign> Hide InDesign (does that one count because it's basically the same as #4)
  6. Use the dock to hide InDesign
  7. Use the dock to quit InDesign (does that one count because it's basically the same as #6)
  8. Command+Tab highlight InDesign Icon in application switcher and Command+Q
  9. Command+Tab highlight InDesign icon in application swticher and then Command+H
