Today’s guest is an Instagram sensation with over 107K followers. Liz Thomson (aka @iheartveggies) is an RVA vegetarian food blogger who creates tasty/healthy recipes for busy people. She is also a cookbook author, a certified health coach and a foster mom. 🫑🥕🍠🥒🥦🥬
Liz has been a vegetarian for 17 years and her goal is to help people eat healthier/live happier. She believes that eating doesn’t have to be complicated or expensive. She also knows how challenging it can be as a mom to feed picky toddlers/hungry teenagers. She has been a foster parent for 4 years with her husband and they have fed kids of all ages. She adopted her son in 2023 and she continues to keep her home open for kids in foster care.
