Thanks for joining us in our Managing with an entrepreneurial
mindset series....this podcast touches on Critical decision making.
our series focuses on Managing with ownership.....this podcast is an introduction to
operational Controls and getting a better understanding finances.

Being a Restaurant operator is a difficult job,
you have to control many things all at once, Staffing, Inventory, Costs,
Procurement, Marketing and Finances…
It is of outmost importance that you understand the numbers to ensure
your restaurant operation is successful. Operating a profitable Food
Operation requires constant oversight and never ending readjusting of
processes and strategies as you react to ever changing business
needs….All being more of a journey rather than a destination.
There are very specific performance metrics food operators need to track
daily to help them assess their success and performance of the operation
along the journey.
Efficiency and profitability doesn't happen overnight. Among other things a
strong financial acumen needs developed in order to keep the operation afloat.
When looking at a Profit and Loss statement there are three Major areas that an operator has to keep His/Her eyes on.. always:
The “Top of the Page” – Income streams from various sources/Sales
The “Middle of the Page” – Usually variable costs like food and Labor
The “Bottom of the Page” – Other Non-Variable costs and expenses

On realistic goal setting and on factors and components you will need to help both calculate and control costs in your Food operation.
