“Sustainably wild, surprisingly delicious,” goes the slogan. Unlike the bottom feeding common carp, invasive Asian carp species – grass, silver, bighead and black – make a light, healthy meal. Increased commercial demand for the fish could help reduce government funds that currently go toward managing the invasive species.
