The pig is one of the oldest forms of livestock, having been domesticated as early as 5000 BC. It is believed to have been domesticated either in the Near East or in China from the wild boar. Since pigs are “omnivorous,” meaning they eat meat & vegetables, they were easy to keep & breed by farmers.
Later, as pork was introduced into Europe and North America, Pork was traditionally used as an autumn meal—pigs giving birth in the spring and fattening during the summer, then the livestock brought to slaughter in the autumn.
Due to the seasonal nature of the meat in Western culinary history, apples (harvested in late summer and autumn) have been a staple to pairing with fresh pork.) You see an apple in a roasted pig’s mouth. It is very common to have pork chops & apple sauce… now you see where that line came from!
Here’s an interesting fact!
Pork IS the most widely consumed meat in the world.
in Asia, specifically in China, Pork is the most consumed meat. In fact, according to the USDA, over 109 Million Tons of Pork is consumed worldwide, with China consuming over 56 million tons of Pork each year!
America consumes about 8,600 tons of pork annually and Europe consumes about 20,000 million tons of Pork Annually.
