Both James and I know that the economy AND the food industry are complex, and the carbon footprint of the food supply chain is responsible for at least 25% of total U.S. emissions. So, we dive into some possible solutions to some of the complexities that could help the big players in the industry reduce carbon emissions.
We also talk about his background as a farmer and butcher, growing up in Ireland. We have a lot in common and we know that, although we may not agree on exactly how to solve these problems, we agree that somehow, we can solve them!
