Journal Club: Pilot Intervention Using Food Challenges and Video Technology for

This presentation will describe a pilot intervention that was fielded and tested with a young adult population. The intervention was grounded in social cognitive theory and used food challenges and video technology to promote fruit and vegetable consumption. Three types of outcomes were developed for the intervention based on social cognitive theory (cognitive, affective, and behavioral). These theory-linked outcomes will be discussed in the context of a programmatic logic model that directly connects key theoretical constructs with learning activities designed to address specific outcomes. As such, the presentation will describe the use of various educational strategies and tools, such as guided goal-setting, cooking practice, and self-reflection, that were effective in meeting the intervention's goals.
