How do you like your tempeh? Turns out, there's more ways to prepare it then just dropping it in the skillet. Which, yes, is my go-to move. Keith fell in love with fermentation and its myriad health benefits while working as a chef at farm-to-table restaurants from New Orleans to Michigan.
In 2019, yes at the beginning of the pandemic, Keith started Chaotic Good Tempeh, using traditional Indonesian fermentations techniques to make chickpea-based tempeh, and using the skills he developed as a chef to make tempeh delicious and approachable with products ranging from tempeh chorizo and burgers, to smoked chickpea tempeh pastrami.
Keith believes soy-free tempeh has a bright future in bettering the food system while remaining affordable, delicious, and nutritious and you'll hear that coming through as he describes the dishes and recipes.
