This is a unique podcast episode with a true Renaissance Man of our age, an artist, chef, and scientist, Enzo Neri. Chef Enzo is an internationally acclaimed chef with experience working in and developing Michelin star restaurants all over the world. He says that "cooking has never been his ambition, but just the way he expresses himself". He has traveled to almost 60 countries in his life, and with his open character and mindset, has been able to single-handedly transform not just restaurants or his close friends and colleagues, but an entire country of the Republic of Georgia with his dynamic and magnetic energy and excitement over the last three years. He is a person that transgresses differences between people's languages, cultures, and beliefs and continues to break new ground, modernize traditional cuisines all over the world and create an unprecedented new tradition of culinary and cultural fusion. In this episode he talks about how chefs are also leaders by their profession, speaks about some of the latest new technologies in modern restaurant kitchens, the scientific rationale of the DOP labels of the protected denomination of origin and the role of history and the environment in culinary traditions.
