What we made in the kitchen this week: Roasted Pepper and Sundried Tomato Chimichurri (Great with seared pork chops, roasted chicken and roasted vegetables)
1/2 jar sundried tomatoes with oil
1 roasted red bell pepper
1-2 anchovies
2 garlic cloves
2 mint sprigs (or other tender herbs such as parsley)
1/2 tsp cayenne
1-2 tbsp red wine vin
Salt and pepper
2 tbsp olive oil
Blend all ingredients in a food processor or blender and serve on the side of your favorite proteins or vegetables.
