Recipes - Comfort Foods
Cynthia’s Chicken Enchilada Casserole
1 chicken boiled and deboned
1 onion diced
2 Oz of green chiles
1 can cream of mushroom soup
1 can cream of chicken soup
A dozen corn tortillas
½ lb sharp cheddar, ½ lb jack or whatever your preference, shredded
Sautee the onions then throw in the soups and chiles to heat then throw in the chicken.
Cut the tortillas into triangles and then cover a Pyrex with some of the tortillas, then layer the soup mix, then cheese on top, and then layer again.
350 in the oven for an hour or 400 for 40 minutes, top with red enchilada sauce
Zuppa Toscano
cut bacon into smaller pieces cook remove from pot
Brown 1 lb mild Italian sausage remove from pot
Remove excess fat
Add peeled and chopped potatoes
Mix beef bouillon with water, add to potatoes to boil
While boiling clean and chop kale and
chop an onion
Once potatoes are tender
return the sausage to the pot
add onion
Season to taste:
Seasoning salt
Garlic paste
Italian seasoning
Oregano
Garlic and Herb seasoning
Add heavy cream to thicken the broth
Add kale for last 10 minutes
return bacon
last 2 minutes add fresh parmesan
