The gelatin that goes into Jello and similar products comes from sanitized, pulverized, boiled animal hooves. Animal hooves are largely made of keratin.

It ran for 21 years in the Connecticut-based newspaper chain and today appears in the Bedford, NY Record-Review. Over the column's run, he has written over 1300 columns totaling nearly a million words. Ed's writings have been published in The Adirondack Explorer, Adirondack Life, Audubon, Birder's World, Bird Watcher's Digest, The Conservationist, Garden, Lake Life, Living Bird, Middlebury, National Parks, Reckon, Utne Reader, Vassar Quarterly, and Wildlife Conservation. He is a contributing editor at Bird Watcher's Digest and for thirteen years has written a column, “The Wild Side," for The Adirondack Explorer. He also teaches writing workshops for adults, seniors, and children. Ed, his wife, Debbie, and their children Ned and Tasman live on 18 acres along the Saranac River in New York's 6 million acre Adirondack Park.
