Making Muffins

I've been out for a while as I have gone through a major transition in my life a few weeks ago. I have missed recording these podcasts, but I have learned in life that everything comes at the right time...

Last night I found myself making muffins for the first time in years. That's when I knew I'd be recording today. Have a listen to hear about the process of overwhelm, and the importance of letting ourselves BE. Every experience in life teaches us valuable lessons, and today I share some of what I learned from the experience of Overwhelm.

And just for fun, here is the recipe for these muffins. I got it about 22 years ago and have made dozens of batches, and shared the recipe almost as many times. Enjoy!

Healthy Muffins!

2 cups 70% finely ground whole wheat flour

1 Tbsp baking powder

1/4 cup demerara sugar

1/4 cup canola oil

1 cup soy milk

1 egg

Mix together until just combined. Throw in 1/4 cup chocolate chips and mix until combined. Use greased 1/4 cup to fill muffin tray lined with muffin papers.

Bake at 350F for 19 minutes (do not overbake)

Makes 12 muffins
