Javier Cabral is the Editor-in-Chief for James Beard Award-winning L.A. TACO. Associate Producer for James Beard Award-winning Las Crónicas Del Taco. He is the former restaurant scout for Jonathan Gold (the only food critic ever to win a Pulitzer award). And also the co-Author of “Oaxaca: Home Cooking From the Heart of Mexico (2019) and “Asada: The Art of Mexican-Style Grilling” (2023). He is currently a guest professor at USC, teaching a Tijuana Food, Art, and Culture class.
