North Carolina is about as far south as you could go to tap a sugar maple for a consistent product. And that’s what they’ve done on the Maple Creek Farm in Burnsville, our state’s only commercial syrup producer. Each tap can yield up to 10 gallons of sap per season that is then boiled down yielding about a quart of syrup. But the syrup is only part of their operation. Aiming for sustainability through a variety of products, they also offer pasture-raised pork and lamb. Come meet these enterprising farmers and see how they make their delicious syrup.
