Nutria, The Other White Meat

National Invasive Species Awareness Week this year was February 25 - March 3. We helped Oregon celebrate this with a Facebook Live event that included cooking nutria, Eurasian collared doves, and rusty crayfish. While preparing and eating the doves and crayfish didn’t spur a lot of comments, the reactions to eating nutria lasted for weeks. If you haven’t ever tried nutria, it’s a surprisingly mild meat that falls between chicken and pork in consistency. We’ll cover the basics of cleaning and cooking this large, semiaquatic, herbivorous rodent.
