This episode features Bill Mathias of Old Republic Distillery.  "We distill for flavor baby... It's all about the flavor."   

The distillery started with a passion.  Bill's grandfather and great grandfather made home made wine.  They made dandelion and watermelon rind wine.  They made alcohol from what was readily available.  Bill was curious about how they made what they did.  At 18 Bill brewed his first beer and learned all about fermentation.  He runs three stills.  He's making the mash and fermenting to put out some exceptional and flavorful spirits.  Take a listen and let us know what you think.
