One Pot Sausage and Veggie Recipe!

One Pot Sausage and Veggie

Ingredients:

  • 2 cups baby (or regular) potato, rinsed and cut small
  • 1/2 red pepper, sliced
  • 1/2 yellow pepper, sliced
  • 1/2 zucchini, halved and sliced
  • 1/2 onion (white or yellow), sliced and diced
  • 1 package sausage, halved and sliced
  • 3 tablespoons olive oil
  • 1/2 teaspoon garlic powder
  • 1 tablespoon Italian seasoning
  • 1/2 cup chicken broth
  • salt and pepper

    • Directions:

    1. Wash your hands, then wash and dry potatoes, peppers, and zucchini. Prep all of it so you'll be ready when the time comes to add everything! Heat olive oil in a pot on about medium heat, add the potatoes, seasoning with salt and pepper. Fry until golden brown and cooked(8-10 mins). Once cooked, remove potatoes from the pot and set them aside.
    2. Using the same pot, brown the sliced sausage with 1 tbsp of olive oil. Once cooked, remove from the pot and set aside.
    3. Same pot again, add the diced onion and garlic powder, cooking for 1-2 minutes with the remaining oil. Add the pepper and zucchini, season with Italian seasoning, salt and pepper, cooking until softened (~2 mins)
    4. Add the sausage and potato back into the pot and mix everything together. Add the chicken broth and cook for 5 more minutes. Adjust seasonings as needed and serve! Garnish with parsley and enjoy!

      5. You can use any kind of sausage you'd like for this recipe, or if you're in Germany, I know there's different varieties of sausages that I don't even know about! So feel free to experiment, but whatever you do, have fun and enjoy!! There's no greater joy than making something in the kitchen that tastes delicious.
