It's almost a fifth season, this transition from winter to spring, when the maple trees in Indiana run full with sugary sap. The trees are tapped, the sugar water is collected and then cooked down over roaring fires until it becomes maple syrup. In this episode of Indiana Home Cooks, Susan Mintert visits Parke County where the Maple Syrup Festival has been held for over a half-century.
