Recipes:

Jen’s Nachos

Preheat the oven to 400 degrees and cover the baking sheet with parchment paper

Spread chips out in a single layer over parchment and cover with a thin layer of shredded cheese

Add beans, jalapenos, onions, tomatoes, and peppers, then top with a second layer of shredded cheese

Bake for 10 minutes, then top with cilantro and serve with salsa, sour cream, and avocado slices

Betina’s One-Pot Cowboy Spaghetti

Ingredients

Spaghetti pasta

Half a rope of Kielbasa sausage

3 slices of bacon, chopped

½ pound of ground beef

½ pound of mild Italian sausage (If you want hot, go for it)

Half of an onion chopped

Half bell pepper chopped

3 garlic cloves

2 jalapenos seeded and chopped

2 cups water with beef stock

Small can tomato paste

Can of diced tomatoes

Can of tomato sauce

Worcestershire sauce

Shredded cheddar cheese

Seasonings: Lawry’s seasoning salt, Garlic powder, Cajun seasoning, black pepper, Italian seasoning.

Brown your meats separately (bacon, kielbasa, Italian sausage, ground beef (season this one first) and remove from pan. Drain excess oil.

Sauté onion, bell pepper, jalapeno, and garlic until softened

Add back your meat to the pot

Add Beef broth and Worcestershire sauce

Add raw spaghetti pasta

Tomatoes and tomato sauce

Make sure the beef broth covers the noodles

Cook covered, stirring frequently to prevent noodles from clustering, until noodles are done

Add cheese and cover to cook for the last 5 minutes

Serve with a salad and Garlic toast
