Betina and Jen reminisce about how they’ve held each other accountable in the past. They discuss being able (or unable) to let go of old friendships, the importance of scheduling rest, and Jen tells the story of her falling out and eventual reunion with her male best friend.
Joyce’s Promise Keeper Pasta
Sautee 3 large cloves garlic in pan with olive oil
Add 2 cups vegetable stock and bring to a boil
Add ½ stick butter, rosemary, thyme, and red pepper flakes and simmer
Mix 2 tbsp flour in a cup, add water until not quite as thick as pancake batter
Slowly flour mixture whisk into sauce
Bring heat up to high and add 12 oz cherry tomatoes
Once all tomatoes popped, add 1 cup parmesan cheese and chopped basil
Finish with more crushed red pepper
Betina’s Baked Ziti
Boil pasta to just under al dente
Brown 1 lb Italian sausage and 1 lb ground turkey in a pot
Add chopped onion, red and green bell pepper, tomatoes
Add garlic paste, tomato paste, 1 can diced tomatoes and 1 can tomato puree
Add Lawry’s seasoning salt, Italian seasoning and oregano and dash of sugar
Ricotta sauce
To a large container of ricotta, add parmesan, mozzarella, fresh spinach and 1 egg
Layer sauce on bottom, ziti, then big scoops of the ricotta mixture, repeat adding mozzarella in between the layers and on top
Bake at 350 for 15-20 minutes
Betina’s Garlic Bread
Bake garlic heads in the oven with olive oil and Himalayan sea salt for 45 minutes
Squeeze into room temperature butter
Spread onto crusty sour dough with salt, pepper, and mozzarella or parmesan cheese and stick back into oven
