Everyone knows about food and labor costs–which are still important–but those are sales metrics. CPLH is a productivity metric that is going to help you discover how productive your employees are, as well as helping you clear up any bottlenecks or areas blocking the flow of service, because the better the flow of service, the more people you can serve, which means the more money you can make.
