Chef Wallace discusses his time on the current season of Top Chef - including his bond with fellow cheftestant Damarr Brown (Chicago's Virtue Restaurant), his early years growing up in Mississippi that influenced him as a chef, as well as the path that got him to start Nick Wallace Culinary and how he came to open Nissan Cafe (by Nick Wallace) inside the Mississippi Civil Rights Museum in Jackson, MS.
