    • Guaiacol (gwai·uh·kaal) - is a naturally occurring organic compound that contributes to the flavor of many substances including whiskey and roasted coffee. What gives whiskey that smoky, spicy, peaty flavor. Theory is that these and other flavor compounds are not attracted to water and are more likely to become trapped in ethanol clusters. So adding water moves the molecules closer to the surface
