Is a dish made from fresh, raw salmon marinated in citrus juices which ‘cooks’ the fish by making it firm and opaque. The salmon is not cooked with heat, but rather the acid from the citrus ‘denatures’ the proteins in the fish, changing its texture and colour. It’s French, its flavourful and it is FABULOUSLY FRESH!
