Savory Stuffed Pumpkin - With Thanksgiving upon us, I wanted to offer a non-traditional and impressive side dish for the table. For me, the sides are were the fun begins on this Holiday (or Christmas for that matter). This stuffed pumpkin can be very versitial as you can place any combination of items in it. Don't want rice, addd quinoa, coucous, or cubed bread in it's place. Remove the protein (sausage) and dairy to make it a vegetarian dish. You can even consider making it a sweet version as well... And please don't pigeonhole this into just being a side dish. This cored out gourd feed 6 big Firefighters for dinner with a side salad and toasted bread on the side.
