Betina and Jen recount their most significant life transitions. They begin with a seasonal temp check, and there’s a high note when they discover that they each froze their butts off at the Mid-Winter Dental Meeting in Chicago before they met. Jen remembers her many attempts to find geographical cures for homelessness within herself, then loses it over the loss of her beloved Uncle Bob. Jen finds hope in letting his spirit live through her every day, and they both take inspiration from his equanimity and the joyful, unattached way he lived his life.

Chicken Tortellini Soup
Season chicken breasts: seasoning salt, garlic powder, Cajun seasoning, and black pepper
brown in the skillet with avocado oil
remove and sautee onions, carrots. and garlic
return chicken
add chicken broth
season with Italian seasoning, paprika, salt and pepper
add fresh rosemary and thyme
simmer for 45 minutes
remove chicken and chop roughly
Pour in bag of tortellini
add heavy cream and fresh parmesan cheese
Jen’s Broccoli Mushroom Soup
Sautee one finely chopped onion in olive oil
Brown 8 oz mushrooms
Add 3 cloves minced garlic
Add 4 cups vegetable stock and 1 small head broccoli and bring to a boil, then simmer for 40 min
Use blender or immersion blender to blend
Add ½ cup heavy cream and ½ cup parm, salt and pepper to taste
Serve hot with fresh parsley and crusty bread
