Here's a simple and healthy Spicy Cabbage Soup recipe that's perfect for a diet—low in calories but packed with flavor and nutrients!

Spicy Cabbage Soup (Diet-Friendly)

Ingredients:

- ½ small green cabbage, shredded (~4 cups)

- 1 onion, diced

- 2 carrots, sliced

- 2 celery stalks, chopped

- 3 garlic cloves, minced

- 1 bell pepper, diced (optional)

- 1 can (14 oz) diced tomatoes (or fresh tomatoes)

- 4 cups low-sodium vegetable broth (or chicken broth)

- 1 tsp cumin

- ½ tsp paprika

- ½ - 1 tsp red pepper flakes (adjust for spice level)

- 1 tsp oregano

- 1 tbsp apple cider vinegar (or lemon juice)

- Salt & black pepper to taste

- Fresh parsley or cilantro for garnish

Instructions:

1. Sauté veggies – In a large pot, sauté onion, garlic, carrots, and celery in a little water or 1 tsp olive oil (optional) for 3-4 mins.

2. Add spices – Stir in cumin, paprika, red pepper flakes, and oregano.

3. Add liquids & cabbage – Pour in broth, diced tomatoes, and shredded cabbage. Bring to a boil.

4. Simmer – Reduce heat, cover, and simmer for 15-20 mins until veggies are tender.

5. Finish with vinegar – Stir in apple cider vinegar (or lemon juice) for a tangy kick.

6. Season & serve – Adjust salt & pepper, garnish with fresh herbs, and enjoy hot!
