When I was back home in Texas, I stumbled upon Southern Star. Maybe I never had my eyes open, but the Texas beer scene has been blowing up like crazy in the last few years, much like everywhere else. However, unlike everywhere else, I grew up in Texas, so seeing beer go nuts there caught me by surprise. One brewery that has been around for a while to see this all happen was Southern Star. While I didn’t get the chance to explore this north Houston brewery while I was there, I met the owner and founder, Dave Fougeron and had the chance to talk to him on the phone about what it takes to be a regional brewery in Texas.
