Ingredients:

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tsp salt
  • 2 tsp active dry yeast
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 cup unsalted butter, melted and cooled
  • 1 cup warm milk
  • 1 egg, beaten
  • 1/2 cup currants or raisins
  • 1/4 cup mixed peel
  • For the cross:
    • 1/2 cup all-purpose flour
    • 1/4 cup water

Instructions:

  1. In a large bowl, whisk together the flour, sugar, salt, yeast, cinnamon, cloves, nutmeg, and allspice.

  2. Add the melted butter, warm milk, and beaten egg to the bowl. Mix everything together until a soft dough forms.

  3. Knead the dough on a lightly floured surface for 10 minutes, until it is smooth and elastic.

  4. Place the dough in a greased bowl and cover it with a damp towel. Let it rise in a warm place for 1 hour, or until it has doubled in size.

  5. Punch down the dough and knead in the currants or raisins and mixed peel.

  6. Divide the dough into 12 equal pieces and shape each piece into a ball. Place the balls on a greased baking sheet and cover with a damp towel. Let them rise in a warm place for 30 minutes, or until they have doubled in size.

  7. Preheat the oven to 400°F.

  8. In a small bowl, whisk together the flour and water for the cross. Place the mixture in a piping bag or a plastic bag with a small corner snipped off. Pipe crosses onto the buns.

  9. Bake the buns for 15-20 minutes, or until they are golden brown.

  10. Let the buns cool on a wire rack.

  11. Serve the Hot Cross Buns warm or at room temperature.
