Some time ago I spoke with Kari Byron about the National STEM Challenge where young people could submit entries in which they have come up with innovative solutions to everyday issues. In this interview, I spoke with one of those amazing young people - Clarisse Coelho. Her project involved the study of beta-glucan in mushrooms and how we can use that to help boost our immune systems. I talked to Clarisse about the development of her project and how she feels about being selected as a Champion.
