This week we are making Stuffed Portobello Mushrooms πŸ„

This is one of our favorite go-to brunch foods!! Β 

Best of all it only takes minutes to make!!Β 

Sit back and relax, I have all the details right here for you! πŸ€“Β 
Here's the recipe incorporating the ingredients & instructions:

Ingredients:
- 1 Portobello Mushroom for each person, easily can be split in half, they are large

- 1 jar of pesto or homemade pesto
- 1 c. of rice noodles

- 1 diced or sliced onion - smallΒ 

- Basil Leaves, fresh is best

- Sliced Provolone

- 1 package of scallops or beef tips, shredded beef

- Salt/Pepper (pink himalayan salt is what I use)

- Olive Oil

Instructions:

1. Add boiling water to your bowl of rice noodles, set aside

2. Bring a pan of melted but to a nice hot medium temperature

3. Add your scallops, sizzle 3 minutes on each side (they should have a nice light brown coloring) then set aside, you can dice them up if you’d like

4. Clean your mushrooms out (I save the stems to dice up for salads)

5. Rub olive oil and salt all over the mushroom

6. Add a spoonful of pesto and a forkful of twisted cooked rice noodles

7. Mix the scallops, 1 basil leaf, and onions into the noodles
