Spicy Jicama & Basil Soup

Prep: 15 minutes Cook: approx. 30 minutes

In a stock pot, warm the coconut oil over medium heat and saute the jicama for eight minutes. Add the Poblano Pepper, garlic and the “onion half” of the green onions. Season with a pinch of salt. Continue to saute for another four minutes. Deglaze with the Soy Sauce.
Add Shiitake Mushrooms, Chili Paste, Turmeric, Ginger, Vegetable Broth, Salt, and remaining green onions. (For a milder flavor, use less chili paste.) Bring to a simmer and cook, uncovered, for ten minutes. Add basil and cook for an additional five minutes. Finish with a squeeze of fresh lemon juice and salt to taste. Garnish and serve.
