Combine 30ml Islay Single Malt Scotch (such as Lagavulin 16 year old) and 30ml other scotch whisky in a cocktail shaker.
2. Add 30ml lemon juice, 20ml maple syrup and a dash of Angostura Bitters.
3. Finally add an egg white and "dry shake" without ice.
4. Add ice, shake well again and strain into Rocks glass.
5. Garnish with a lemon peel.
