Recipes:
Chicken and Dumplings
Ingredients:
Chicken (dealer’s choice on parts)
Bell pepper (All veggies chopped big)
Onion
Celery
Rosemary
Thyme
Bisquik
Flour
Heavy cream
In a pot Place your chicken, vegetables, season with seasoning salt, garlic powder, cajun seasoning, pepper and add chicken bouillon and boil
While that’s boiling
Roll out your dumplings using the biscuit recipe on the Bisquik box and flour
Once flattened cut to your desired size
Remove the large vegetables and herb stems from stock before dropping your dumplings
Also now would be a good time to chop your breasts and thighs if you used them (my grandma used legs)
Drop your dumplings one by one into the pot (this is important because you don’t want them clumping)
Cook for another 15 minutes
Add heavy cream to thicken
Serve over rice or as a soup
Chicken Lettuce Cups
3 tbsp hoisin sauce
2 tbsp rice vinegar
2 tbsp low sodium soy sauce
1 tbsp chili garlic crisp
1 tsp corn starch
1 lb ground chicken
Onion, green bell, garlic, water chestnuts, scallions
2 heads butter lettuce
Mix first 5 ingredients in a small bowl
Sautee onion and green bell peppers until soft, add chicken and cook until no longer pink, add water chestnuts, scallions, and garlic
Pour sauce into chicken and cook until sauce is warm
Serve with lettuce cups and chili garlic sauce on the side
