Professor Simon Lockrey is a researcher at RMIT focussed on design strategies for the circular economy and sustainable outcomes. He has worked in industry and academia with a number of projects including food waste packaging and dyson hand dryers, and has expertise in life cycle assessment, leadership, business and quite a unique knowledge of art/design history. Although Simon’s background was engineering for new products, he had a realisation in industry where he switched to instead re-design everyday products to support environmental benefit and have real word impact. He has recently become a Professor (congratulations) and he provides some good advice on how to work with partnerships and groups as well as how to learn from these relationships to push forward. We also discuss some interesting real-life examples of the circular economy in action with businesses such as Samsonite and Alessi and how corporate should be promoting environmental stewardship. Dr Emily Denniss is a lecturer and researcher in public health nutrition at Deakin University. Emily in interested in nutrition communication online and how this is impacting our dietary patterns. Her PhD investigated misinformation and disinformation online, with a particular focus of instagram posts from prominent accounts posting on nutrition content. You'll have to listen in for the astonishing results. Emily is also interested in tackling the problem of ultra-processed foods and is working on this topic currently. Dr Stephen Townsend is a lecturer in sport sociocultural studies with the School of Human Movement and Nutrition Sciences. His PhD investigated MuhammadAli and how he was viewed in black only newspapers during 1960-1975. Steven also nearly got the chance to meet him during this time. We discuss his research journey from sports teacher to PhD, his big hitting research team includinginternational experts, a unique story of one of the first documented domestic violence murders where the guilty pleaded insanity, the reality of academia and what it’s like to have the same job as Indiana Jones. Laureate Professor Clare Collins is a famous Australian dietitian who is known by many from her appearances in the media, such as on Triple J with Dr Karl, however there is so much more to Clare than you would know and this is where to hear it. Clare was very generous with her advice on how to succeed in academia. We discuss her current research on genetics and nutrition, past research on obesity in children, dietary assessment, and biomarker assessment, media training, research funding, career history, cystic fibrosis, the juggling of dietetics work, some of the timelines with academic work, and no money no time. Postdoctoral researcher Jaqueline Moura Nadolny is interested in food science. Her unique backgrounud in chemical engineering, nutrition and food places her with a fantastic skillset to explore all questions regarding food. Specifically, Jaqueline has researched tomatoes, cold brew coffee, flour, the Australian indigeneous bunya nut and holds multiple parnterships with well know industry brands such as V2 and works with other products such as wagyu beef. We discuss her research journey which has taken her across the world to France, USA and now Australia, the various food product studies she is conducting (e.g. colour of vegan mince), her home country of Brazil and letting plant based meat become its own 'taste' category. Specifically, Zoya has worked with milk based beverages, Palmitoylethanolamide (PEA), and is looking into plant proteins in the future. We discuss her research career, motherhood, her transition into Lee Hamilton's lab at Deakin University with the aspirations for future funding and her new interest in PCOS and Endometriosis.
