Decades ago, Susy along with her now deceased husband opened the Mediterráneo Chicken. A restaurant specialized in Peruvian style braised chicken, that also launched the first delivery service in the country which was an outrageous success.
In 2004 the dish was declared a National Heritage by the Ministry of Culture and in 2010 the day of “el pollo a la brasa” was declared every third Sunday of July.
