Hey Good Morning Foodie! 
So what's for breakfast? Why don't you try making this delicious Tofu Scramble? It cooks up in about 15 minutes and yields four servings so it can last you throughout the week. 
You will need: 
1 10z package of organic firm tofu
1 yellow onion 
2 Jalapeños sliced   
4 oz of white mushroom 
2 handfuls of baby spinach
2 oz of roasted tomatoes in Olive Oil
8.8 oz of Brown Rice
1 Tablespoon of ground Tumeric
2 tablespoons of Nutritional yeast
Salt and Pepper to taste
