Greg Avola chats with Steve Dunkley, owner of Beer Nouveau in Manchester, UK, who specializes in historic and heritage brewing.

Researching forgotten brewing techniques and long-lost beers. Working with archaeologists to bring back Viking and Egyptian ales, and with maltsters to recreate authentic barrel-aged IPAs, porters, and stouts from the 19th century. A firm believer in the idea that anyone can make great beer, owner and brewer Steve hosts the self-brew space Temperance Street Brewery on the premises and helps run the local homebrew group. More recently he has branched out into producing cider and graff.
