Dry Rub
9 tablespoons ground black pepper
6 tablespoons kosher salt
6 teaspoons garlic powder
6 teaspoons paprika

Dry rub 24-48 hours in advance
Set smoker to 250 degrees (Apple wood chips)
Cook for 3-4 hours until reaches internal temperature of 200 degrees.
