This Crusonia Conversation features chef educators Ken Rubin and Dan Marek who discuss how culinary experts, inspired by the awareness that FOOD IS HEALTH, create more nutritious dishes and empower people to learn about food and cooking.
Chef Ken Rubin is a chef educator, food anthropologist, and Chief Culinary Officer at Rouxbe Online Culinary School. He has developed ethnographic research methods to understand how people learn to cook and is recognized for his expertise in education and training, food culture research, health and wellness, and product development.
Chef Dan Marek runs the Whole Kids Foundation’s Healthy Teachers Program which is designed to provide teachers and school staff with nutrition inspiration and healthy cooking techniques to transform their own wellbeing, serve as healthy role models for their students, and be change agents in their own communities. Dan is also a board member of Slow Food Austin.
