Chop the desired vegetables
Oil skillet with olive oil
Saute veggies and season with salt and pepper
Beat eggs in a bowl and season
Remove vegetables from pan
Add butter to pan
Pour in eggs
As the edges firm, add vegetables and cheese if desired and fold
Flip and cook for 30 seconds
Plate and garnish. Enjoy!
