We are talking all things Superfoods! Last episode we introduced this topic, so if you missed it go back and check it out! But we talked about what a superfood is (and the controversy with that name!) and we started with the Fruit Edition.

Today, we are moving on to the Veggie Edition!

So just a upper quick recap of the definition of what a “superfood” is:

Simply put, Superfoods are nutritional powerhouses.  Superfoods are foods that have a very high nutritional density…they are extremely high in micronutrients like vitamins and minerals and are packed with fiber, as well as antioxidants, enzymes and health fats like omega-3 fatty acids. All of these nutrients are essential to your body so you can thrive. And on top of that, Super foods boost the immune system, help prevent anti-aging, and are linked to the prevention of disease.
