009 - My Ketogenic Experience

I will be honest - I have studied nutrition for years. I have a couple of certificates fromg the courses that I have taken and this entire KETO thing really through me for a loop. Let me back up to the beginning. I came home one day with my husband telling me that I had to come watch a couple of videos that he had watched. I love anything about health and sat down to watch them. Well... we spent the entire evening watching more and more. ALL of them were talking about how sugar was bad for you - even what I believed to be GOOD sugar. The guy in the video - his name is Dr. Eric Berg, really sparked something in me. He kept talking about insuline and the symptoms that he mentioned was all me. Low blood sugar, craving sweets after meals, memory problems, skin issues...and skin tags - which is how the research got started, and even neck and shoulder pain. When Dr. Berg mentioned belly fat being a fatty liver - THAT got my attention. Not only that - the fact that our liver will keep working - even at 98% damage...it will keep working. The only way we get symptoms that there is something wrong with our liver is when it is completely damaged. By damage, I am talking about a fatty liver - it could turn into much more than that!   Watching those videos completely changed our lives. Both my husband & I decided that night to change our eating habits. We slowly ate up anything that contained sugar and lots of carbs. Bit by bit, everything got replaced with high fat, moderate protein and low carbs. I learned that each meal should have 20-40 grams of fat, so that you would feel full and not nibble inbetween meals. The protein was no larger than the palm of your hand and your plate should be full of veggies.   If changing my diet wasn't complicated enough, we also decided to do what is called intermittent fasting. That is fasting for a certain length of time and having a certain window of time where you CAN eat. We choose to do a 16-8 - so to make it easy to explain, we eat from 12 until 8pm. It is actually very easy to do. I start my day out with what I call a 'buttered' tea...my version of a bulletproof tea - coconut oil, MCT oil, butter and my favourite tea - whipped in my blender. It comes out very frothy and yummy like a chai latte. You are allowed this 'buttered' tea during the fast part of your day - it actually helps to fill you up between meals.   When we first started this lifestyle, I didn't know where to start. I mean really....what can we eat? It was not easy in the beginning since we didn't totally understand. We went through the grocery store looking at labels...it took us 2 hours and during those 2 hours, we were blown away by how many of our favourite foods were loaded with carbs and sugar. This was a challenge...to completely eat a totally different way! We decided to slowly eat what we had in the house and NOT to replace it. Bit by bit we eliminated all carbs from our house.   To give you an example of what I eat - I start my day with my buttered tea, then, after 12 noon - when my fasting ends, I have a green smoothie which is kale, spinach, powdered wheatgrass, a small banana - becareful with the amount of bananas - they are high in sugar... if I have parsley, I will throw that into the blender and also a few berries - which is apparently the only fruit that you can have to stay in keto. For lunch, I enjoy 1/2 an avocado, 1 hard boiled egg, 3 slices of marble cheese - or whatever kind of cheese I have, a few celery stalks dipped in a mix of coconut oil & almond butter.   For dinner, I would have a 3 egg omlette with mushrooms, peppers, onions & shredded cheese OR a small piece of chicken or fish with a plate full of veggies or a salad. Basically, you want protein the size of the palm of your hand, lots of veggies and fat! If there is not enough fat in your meal, have around 10 pecans - that will give you the fat to last until the next meal.   I honestly feel amazing and will likely continue with this lifestyle. I have lost 8 pounds so far and my belly is flattening. I have a ton of energy and feel inspired to keep going with it. When you think about it, the first thing that they recommend people give up when they have cancer is SUGAR - because SUGAR feeds the cancer cells. Switching to a KETO diet, actually kills off cancer cells - THAT was enough for me to try this lifestyle out.   I am excited about the freebie I created for you this week - its my complete HOW-TO to get your started on this incredible KETO lifestyle.
