Here's a less disappointing cake. Use your favorite white cake recipe or even box mix... the almond cream filling is the star of the show here! Adapted from https://hungryrabbit.com/2012/06/chocolate-cake-w-almond-cream-filling/. I halved the recipe since it was only for 4 small cakes.1/2 cup whole milk1 tblsp almond paste (or almond flour if you don't have almond paste)2 large egg yolks1/4 cup granulated sugar3/4 tsp cornstarch1/8 tsp fine sea salt1 tblsp Amaretto (or 1 tsp almond extract- less if you used almond paste)1/4 cup heavy creamHeat milk and almond paste/flour in a saucepan until just simmering.Whisk together egg yolks, sugar, cornstarch, and salt in a bowl.Very gradually add hot milk into egg yolks while whisking (temper the egg yolks). Add mixture back to saucepan.Cook on medium heat, whisking CONSTANTLY until the mixture thickens and bubbles. This cooks the egg yolks and cornstarch.Add amaretto or almond extract, cover and refrigerate at least 1 hour.Whip your heavy cream to stiff peaks and then fold into almond cream to lighten it up. You might not need to add it all- stop when it's the texture you want. Refrigerate again at least 30 minutes.
