Charles Brickett and Martin Merriman are the owners of CalTex Barbecue. From Charles grilling up stuff in his dad’s back yard in Waskom, Texas to Martin cooking up for his family and friends in Southern California, the two have been dialing in their skills for years. They started with pop-ups at The Seventh Tap in Shreveport, Louisiana and recently took home People’s Choice Champion in the EBM Backyard Smokeout 2024. Now they’re getting ready to put a food trailer on the road. These two are bringing some of the best barbecue around to the SBC by adding a Mexican twist to Texas style barbecue.
