1 yellow onion3 russet potatoes2 bell peppers (color is your choice)1 clove garlic1 package mushrooms cooked brown rice garam masala powder curry powerturmericcumincoconut oil for cooking1/2 can coconut milksalt + pep cilantro or coriander for garnish (optional) Boil pot of water, season with salt. Chop potatoes into home fries sized pieces. Boil until fork tender, about 15 minutes Chop yellow onion into strips. Heat saucepan on med-high heat with 1-2 tbsp coconut oil. Throw onions in, let sweat for a few minutes. Chop peppers into strips; mince garlic; slice mushroomsAdd garlic to pan (DO NOT BURN) along with 4 tsp each of garam masala powder and curry powder. Add more coconut oil as needed.Add peppers and sliced mushrooms to panSeason with 1 tsp each of turmeric and cumin. Adjust seasoning to taste, add more if you want it extra flavorful! Let veggies sauté in spices until cooked fully with some color. Add approx 1/2 can coconut milk, stir all together. Let reduce for ~10 mins, season with salt + pepServe with brown rice and enjoy!
